都匀毛尖产于贵州都匀市,是中国名茶之一。在1956年由毛泽东亲笔命名,又名"白毛尖"、"细毛尖"、"鱼钩茶"、"雀舌茶",是贵州三大名茶之一。外形条索紧结纤细卷曲、披毫,色绿翠。香清高,味鲜浓,叶底嫩绿匀整明亮。味道好,还具有生津解渴、清心明目、提神醒脑、去腻消食、抑制动脉粥样硬化、降脂减肥以及防癌、防治坏血病和护御放射性元素等多种功效与作用。


都匀毛尖的功效与作用非常多,因为都匀毛尖含有丰富的蛋白质、氨基酸、生物碱、茶多酚、糖尖、有机酸、芳香物质和维生素A、B1、B2、C、K、P、PP 等以及水溶性矿物质。


1. 能降低血压

茶叶内含的咖啡碱和儿茶素能促使人体血管壁松弛,并能增血管有效直径,使血管壁保持一定弹性,消除脉管痉挛。毛尖茶中的一氨基丁酸对松弛血管壁的效应更显著;大多数高血压患者血压增高受血管紧张素所控制,一旦抑制住血管紧张素活力,就能达到降压作用;喝茶能降低血液中胆固醇含量。

茶叶中的儿茶素类物质,对人体总胆固醇、游离胆固醇总类脂和甘油三酸脂含量均有明显的降低作用。常饮茶的人血液中胆固醇含量比不饮茶的人要低三分之一左右。能促进脂类物质转化吸收。


2. 净化人体机能

茶叶中具有嘌呤碱、腺嘌呤等到生物碱,这些生物碱可与磷酸、戊糖等物质形成核甘酸,核甘酸类物中的ATP、GTP等化合物对脂类物质的代谢起着重要作用,尤其对含氮化合物具有极妙的分解、转化作用,使其分解转化成可溶性吸收物质,从而达到消脂作用,具有净化人体消化器官的作用。茶叶中的黄烷醇可使人体消化道松弛,净化消化道器官中微生物及其它有害物质,同时还对胃、肾、肝脏履行特殊的净化作用,不但有助于脂肪等物质的消化,而且还能预防消化器官疾病的发生。


3. 抗癌物质的突变作用

茶叶中抗氧化组合提取物GAT有抑制黄曲霉素、苯并吡等致癌物质的突变作用,故有抑制肿瘤转移的效应;茶叶中含有大量EGCG,它能有效地抑制人体中促瘤剂活性,可有效地防癌细胞的生成;茶叶提取物T—8750剂对胃腺癌细胞有明显的抑制作用;亚硝胺及亚硝基化合物,而茶叶中所含的茶多酚是阻断硝基化合物的主要活性物质。茶叶中茶多酚的含量越多,抗癌作用也就越强。


冲泡方法

都匀毛尖茶在色、香、味上,讲求嫩绿明亮、清香、醇爽,因此,绿茶的冲泡,看似简单,其实极考工夫。因绿茶不经发酵,保持茶叶本身的鲜嫩,冲泡时略有偏差,易使茶叶泡老闷熟,茶汤黯淡香气钝浊。此外,又因绿茶品种最丰富,每种茶,由于形状、紧结程度和鲜叶老嫩程度不同,冲泡的水温,时间和方法都有差异,必须经过多次的实践,掌控好水质,水温,茶量,茶具等,才能泡出一杯好茶。


饮用步骤

(都匀毛尖茶大部分都富含锌硒等有机成分,产茶区没有工业污染,制茶过程不落地,高清洁,所以很多茶在冲泡时是不需洗茶的)


1)、烫杯后,取茶入杯。此时较高的杯温已隐隐烘出茶香。

2)、沿杯壁注入适温的水,至杯容量三分之一(也可少一些,但需覆盖茶叶)然后微微摇晃茶杯,使茶叶充分浸润。此时茶香高郁,不能品饮,不过恰是闻香最好的时间。

3)、稍停约两分钟,待干茶吸水伸展,再沿杯壁注入适温的水几乎至满。此时茶叶或徘徊飘舞,或游移于沉浮之间,别具茶趣。开始品饮。

4)、待茶汤还剩三分之一左右时,再续入适温,适量的水,接着品饮。


Duyun MaoJian tea is produced in the Duyun City of Guizhou, China, and is one of the most famous teas in China. It was personally named by Mao Zedong in 1956 and is also known as "White MaoJian," "Fine MaoJian," "Fish Hook Tea," and "Sparrow's Tongue Tea." It is one of the three famous teas in Guizhou. Its appearance features tightly rolled, slender, and curly tea leaves with a green emerald colour. It has a clear and high aroma a strong and fresh taste, and the tea leaves are tender, evenly green, and bright. It tastes good and offers various health benefits and effects, including quenching thirst, clearing the mind, refreshing the brain, aiding digestion, inhibiting atherosclerosis, reducing cholesterol, anti-hemorrhagic disease, and protecting against radioactive elements.


Duyun MaoJian tea has numerous health benefits and effects because it contains abundant proteins, amino acids, alkaloids, catechins, tea polyphenols, saponins, organic acids, aromatic substances, and vitamins A, B1, B2, C, K, P, PP, as well as water-soluble minerals.


Lowers Blood Pressure:


The caffeine and catechins in tea can relax blood vessel walls, increase blood vessel diameter, maintain blood vessel elasticity, and eliminate blood vessel spasms. One amino acid in MaoJian tea, arginine, significantly affects relaxing blood vessel walls. In most cases, high blood pressure is controlled by angiotensin, and inhibiting the activity of angiotensin can lower blood pressure. Drinking tea can also lower cholesterol levels.


The catechin compounds in tea have a noticeable effect on reducing total cholesterol, free cholesterol, and triglyceride levels in the blood. People who regularly consume tea have about one-third lower cholesterol levels than non-tea drinkers. Tea promotes the transformation and absorption of lipid substances.


Purifies Body Functions:


Tea contains purine alkaloids such as theobromine and adenine. These alkaloids can form nucleic acids with substances like phosphoric acid and pentose. Compounds like ATP and GTP in nucleic acids play a significant role in the metabolism of lipids, especially in the decomposition and transformation of nitrogen-containing compounds. This helps convert them into soluble absorbable substances, which aids in fat reduction and purifies the digestive organs in the human body. Tea flavanols can relax the gastrointestinal tract, purify the microbiota and other harmful substances in the digestive organs, and also have a special cleansing effect on the stomach, kidneys, and liver, preventing digestive organ diseases.


Brewing Method:


Duyun MaoJian tea emphasizes a bright, clear, and fragrant green colour with a fresh and smooth taste. Brewing green tea may seem simple, but requires precision. Since green tea is unfermented, any deviation in brewing can lead to over-steeped, dull, and cloudy tea. Additionally, there is a wide variety of green tea, each with different leaf shapes, tightness, and freshness, which means that water temperature, steeping time, and methods may vary. It requires multiple attempts to master water quality, temperature, tea quantity, and tea utensils to brew a perfect cup of tea.


Brewing Steps:


(Note: Most Duyun MaoJian teas are rich in organic components like zinc and selenium, and the tea-producing areas are free from industrial pollution. The tea-making process is clean, so rinsing the tea is usually unnecessary.)


Preheat the teacup and add the tea leaves. The higher temperature of the cup should already release a hint of tea fragrance.


Pour water along the cup's wall to fill about one-third of its capacity (you can use a bit less, but it should cover the tea leaves). Gently shake the teacup to ensure the tea leaves are thoroughly soaked. The tea aroma is at its peak, but it's not ready to be consumed yet. It's the best time to enjoy the fragrance.


Wait about two minutes for the dry tea leaves to absorb water and expand. Then, pour water along the cup's wall, almost to the top. The tea leaves may float or sink at this stage, creating a unique tea experience. Begin sipping.


As the tea liquid reduces to about one-third, add more water at the appropriate temperature and quantity and continue sipping.
