杏仁的功效及作用：

　　1、镇咳、平喘作用

　　苦杏仁中含有苦杏仁苷，苦杏仁苷在体内能被肠道微生物酶或苦杏仁本身所含的苦杏仁酶水解，产生微量的氢氰酸与苯甲醛，对呼吸中枢有抑制作用，达到镇咳、平喘作用。

　　2、对消化系统的作用

　　杏仁味苦下气，且富含脂肪油。脂肪油能提高肠内容物对黏膜的润滑作用，故杏仁有润肠通便之功能。

　　3、 抗炎、镇痛作用

　　苦杏仁苷分解产生的苯甲醛静安息香缩合酶作用生成安息香。安息香具有镇痛作用，因此国内有人用苦杏仁治疗晚期肝癌可解除病人的痛苦，有的甚至不需服用止痛药。

　　4、 降血脂作用

　　临床报道，大杏仁可以明显降低高血脂患者的血脂水平，Spiller(1990年)认为杏仁中的单不饱和脂肪酸有助于降低患者轻度升高的血脂，且无需严格限制饮食。

　　5、美容作用

　　根据肺合皮毛理论，在临床上对某些皮肤疾病可从宣肺法论治，配伍食用杏仁，常获捷效。现代研究证明，苦杏仁中所含的脂肪油可使皮肤角质层软化，润燥护肤，有保护神经末梢血管和组织器官的作用，并可抑杀细菌。此外，被酶水解所生成的HCN能够抑制体内的活性酪氨酸酶，消除色素沉着、雀斑、黑斑等，从而达到美容的效果。

　　食用杏仁的注意事项有哪些呢?

　　杏仁含有毒物质氢氰酸(100克苦杏仁分解释放氢氰酸100～250毫克。氢氰酸致死剂量为60毫克。甜杏仁的氢氰酸含量约为苦杏仁的三分之一)，过量服用可致中毒。所以，食用前必须先在水中浸泡多次，并加热煮沸，减少以至消除其中的有毒物质;产妇、幼儿、湿热体质的人和糖尿病患者，不宜吃杏及其制品。

　　另外食用杏仁还要注意食物相克。

　　杏仁不可与小米同食。

　　杏仁不可与黄芪、黄芩、葛根等药同用。

　　杏仁不可与栗子：同食会胃痛。

　　杏仁、菱与猪肺：同食不利于蛋白质的吸收。
