Made with love and respect by hard-working nuns in the Languedoc. Every year, the nuns get on their step ladders and pick the green walnuts from their ancient orchard of gnarly walnut trees. The walnuts are then macerated with red wine vinegar and a little cane sugar for 4 months before bottling. It's a truly delectable, intoxicating vinegar lovely drizzled over a ripe Canteloupe melon and tres bon for deglazing the pan to make an unctuous gravy after roasting chicken, pheasant or guinea fowl. Great too in bitter leaf salads with walnuts, crumbled blue cheese and beetroot. perfect also for a classic Waldorf salad dressing.
