在需要快速大量产生气体的时候一般会用到臭粉。臭粉在加热时或酸性条件下会分解成水，氨气和二氧化碳气体。由于快速释放，氨气在成品里残留很少，不会在成品里尝出氨味。由于臭粉容易分解放出氨气（这就是臭粉名字的出处）而失去作用，它很难储藏，一般在家庭较少使用。在烤制桃酥或某些饼干时要用到臭粉。
