甜菊叶属菊科，又名甜叶菊、甜草，是一种多年生草本植物。?[1]?





原产于南美巴拉圭和巴西交界的阿曼山脉，作为一种天然、绿色、具有甜味和保健双重功能的植物饮品原产地居民已沿用几百年。我国现已成为世界上最大的甜菊糖生产国和出口国。





甜菊干叶中除甜菊糖苷外；非糖部分有蛋白质、脂肪、纤维素、酚酸类、黄酮类、维生素、微量元素等。工业中提取甜菊糖后的残渣中，含有大量的纤维素、无氮浸出物、粗蛋白等。甜叶菊中的糖苷类物质属于萜类化合物，从甜叶菊中已分离出十几种此类成分，提取分离技术已相当成熟，包括还有近来备受关注的莱鲍迪苷D(RD)和莱鲍迪苷M(RM)在内，这些糖苷类物质均含有同一苷元甜菊醇(Steviol)，因在其C19和C13位上连接不同数量的葡萄糖基或鼠李糖基，使得其甜度和味质差异很大。其中占主要的两大类分别为甜菊苷(Stevioside)和莱鲍迪苷A(RebaudiosideA，RA)。其中RA是比甜菊苷甜质更受欢迎的甜味剂，甜度是蔗糖的300倍，对酸、碱、热都很稳定，长期储存不易变质，加入食品中经热处理也不会有褐变现象，因而是理想的传统甜味剂更新换代产品和绿色保健品。
