什么是干贝：
干贝又名瑶柱或元贝，是华人过年食用率相当高的食材，那是用贝类中的扇贝、江瑶贝和明贝，经煮熟将其闭壳肌剥下洗净晒干而成的一种干货。
干贝含有蛋白质、脂肪、碳水化合物、维生素A、钙、钾、铁、镁、硒等营养元素，干贝含丰富的谷氨酸钠，味道极鲜，与新鲜扇贝相比，腥味大减。
一般人都适合食用，但不宜过量，以免影响肠胃消化功能，而痛风患者则应避免。
干贝的功效与作用：
干贝性平，味甘、咸；具有滋阴、补肾、调中、下气、利五脏之功效；
干贝具有滋阴补肾、和胃调中功能，能治疗头晕目眩、咽干口渴、虚痨咳血、脾胃虚弱等症，常食有助于降血压、降胆固醇、补益健身。据记载，干贝还具有抗癌、软化血管、防止动脉硬化等功效。如何选购干贝：
首先，要看干贝的大小，一般来说，个头越大也就越贵，按直径来说，最大的与最小的几乎可以相差5、6倍；
其次，是看颜色，干贝表面呈金黄色，掰开来看，里面也是金黄或略呈棕色的就是新鲜的标志，如果表面有一层薄薄的白粉状的附着物，则是风干多时的，这样的瑶柱，用来煲汤、做粥品还可以，但用来做菜，味道就会稍逊一些；
如何保存
干贝最好放置在密封性能好的乐扣乐扣保鲜盒中，必要时需放入冰箱冷藏，随吃随取。
