橄榄，又名青果，因果实尚呈青绿色时即可供鲜食而得名。《滇南本草》说它：“治一切喉火上炎”。《本草纲目》亦载：“治咽喉痛，咀嚼咽汁。”冬春季节，每日嚼食2～3枚鲜橄榄，可防止上呼吸道感染，故民间有“冬春橄榄赛人参”之誉。 [1]
福建是我国橄榄分布最多的省份，广东、广西、台湾、四川、浙江等省亦有栽培。除供鲜食外，橄榄可制成各种加工品，如五香榄、甘草榄，还可蜜制、盐腌等。 [2]
橄榄加上甘草，更加强了清肺、利咽、生津、解毒作用。这里主要介绍甘草橄榄的家常做法。
