糯米粉是以糯米浸泡一夜，和水磨打成浆水，用布袋装着，吊一个晚上。待水滴干，把湿的糯米粉团掰碎、晾干后的成品。黏度比在来米粉来得高些，所以作出来的成品黏度较高。一般市售的糯米粉，如非特别注明，都是生糯米粉。可用来做汤圆、年糕、月饼外皮、麻糬外皮、煮八宝粥时可以增稠、饭团。
