Mussels Assam Pedas Nyonya Style
*Rempah paste (ground):
50g shallots
20g garlic
20g dried chillies
20g red chillies
10g ginger
4g turmeric
3g galangal
1 stalk lemongrass
3g belacan

Ingredients:
12 mussles
50g rempah paste*
1 piece assam keping
1 tbsp oil
100ml water
½ tsp salt
1 tsp brown sugar

Method:
1. Heat up 1 tbsp oil in TEFAL UNLIMITED MULTIPAN 26CM.
2. Saute rempah paste till fragrant. Add in assam keping and stir well.
3. Add in mussels and stir well with rempah paste.
4. Add in water and bring to a boil.
5. Season with salt and brown sugar.
6. Dish up, sprinkle shredded lemongrass on top.
7. Serve immediately

娘惹香辣炒青蚝
＊香辣酱（打烂）：
50g小葱头
20g蒜头
20g辣椒干
20g红辣椒
10g姜
4g黄姜
3g南姜
1支香茅
3g马来占

材料：
12只青蚝
50g打烂香辣酱＊
1片阿叁片
1大匙油
100ml水
½小匙盐
1小匙黄糖

做法：
1在TEFAL UNLIMITED 26CM多用途炒镬热1大匙油。
2炒香香辣酱，加入阿叁片炒匀。
3加入青蚝拌炒均匀。
4倒入水煮滚。
5加入盐和黄糖调味。
6盛起，撒上香茅丝装饰。
7趁热上桌。
