For cooking -枧水，也称碱水，或称食用枧水，是一种复配食品添加剂，是食品工艺中的材料，广式糕点常见的传统辅料。 -在调制广式月饼饼皮面团时，常加入叫“枧水”的物质。枧水是广式糕点常见的传统辅料 作用： 一是中和转化糖浆中的酸，防止月饼产生酸味而影响口味、口感； 二、控制回油的速度，调节饼皮软硬度； 三、是使月饼饼皮碱性增大，有利于月饼着色，碱性越高，月饼皮越易着色； 四、是枧水与酸进行中和反应产生一定的二氧化碳气体，促进了月饼的适度膨胀，使月饼饼皮口感更加疏松又不变形。 -Liquid soap, also known as alkaline water, or edible liquid soap, is a compound food additive, a material in food technology, and a common traditional auxiliary material for Cantonese-style cakes. -When preparing Cantonese-style mooncake dough, a substance called "liquid water" is often added.
